4 Ingredient Pancakes (Vegan/GF)
Every Saturday morning I wake up, a little bored of my go-to smoothie or oatmeal breakfast. My sweet tooth definitely kicks in and this vegan pancake recipe saves me on those kind of mornings. I love this recipe because it gives you that pancake fix without the calories or unhealthy ingredients. These are vegan, gluten free friendly, packed with flavour and you only need 4 ingredients!
4 Ingredient Vegan & GF Pancakes
1 cup of gluten free oats
1 cup of oat or almond milk
1 large banana
1 tsp ground cinnamon
A tiny pinch of salt
2-3 tbsp coconut oil
Blend all ingredients in a food processor until smooth (you could use a blender if you don't have a food processor)
Heat a lightly oiled frying pan over medium heat. I use coconut oil!
Pour batter onto the pan and cook until golden on both sides, about 2-3 minutes were side. Just turn them over when you see the bubbles.
Top with fresh bananas, dates and maple syrup. Enjoy!
