Coconut Fig Banana Cookies

Though I don’t abstain from gluten or dairy by necessity, I do like to find alternatives for reasons that include both taste and nutrition – and, admittedly, as a bit of a challenge. For all the great culinary options abound in Berlin, I do find that there’s a lack of selection when it comes to gluten-free and vegan baked goods. So I took it upon myself to experiment a little in the kitchen this past weekend and came up with these delights, a medley of natural flavours (coconut, banana, fig) bound together by a self-made gluten-free, dairy-free mash in place of eggs.

Vegan Peanut Butter Cups

These peanut butter cups are all natural with no added sugar or flour. They are sweetened with delicious dates which balance out the nutty flavours from the peanut butter and ground almonds. The chocolate top is made from raw coco and coconut oil to give a decadent texture. They are the perfect treat to have without the guilt!

Whole-grain Raspberry Lemon Muffins

There are few things more comforting than a hearty muffin in the early morning. This whole grain raspberry muffin is something you can feel good about eating and is a perfect replacement for a hurried breakfast or afternoon snack. The tartness of lemon paired with raspberry is so bright and delicious, and you can skip the butter and sugar with these muffins because they’re naturally sweetened with honey and apple sauce!
