Apple Banana Breakfast Oats (GF/V)

I often get asked what’s in my breakfast bowls when I post them on instagram, which is something I’ve wanted to share with you for a while. I usually go through phases when it comes to my morning routine; in the summer I really enjoy plain yogurt and fresh berries, but in the winter I crave something a bit more hearty. I’ve always been a cereal fan, but there are few out there that are actually filled with good, natural ingredients. Whenever I do find a tasty and healthy one I like, it’s overpriced and I find myself running out way too quickly. Naturally, I decided to make my own oat cereal and mix in all my favourite pantry staples. It’s simple, filling, gluten-free, vegan, and I absolutely love it with my morning coffee. Feel free to switch in all your favourite ingredients; I gave you my measurements below as a guide.

 

Apple Banana Breakfast Oats (gluten-free/vegan)

1/2 cup gluten-free oats
1 apple thinly sliced and chopped
1 banana sliced
1 dried fig, sliced
1 date, sliced
1 tbsp. flax seeds (add more if you like!)
1 tbsp. fresh coconut flakes
1/2 tsp. cinnamon
Optional (drizzle of honey, but I find the dried fruit is enough sweetness for me)
Small handful of almonds or nut of your choice
3/4 cup of almond milk

Mix everything in a bowl and pour in almond milk! Enjoy.
