Avocado Chickpea Sandwich
I think I would put avocado on just about anything savoury; there’s a certain creaminess that you can’t get from any other healthy thing out there. Let me start by saying I usually prefer to eat gluten-free – not because I have an allergy, but for the health benefits and because I know I feel my best without it. However, healthy living to me is not restricting yourself from these foods completely, and I like to whip something up like this and enjoy every last bite when I’m really craving a sandwich.
This week has been nothing but gloomy and cold, which led me to make these sandwiches-mid afternoon to cheer us up at our desks. They consist of a layer of smashed avocado with chilli flakes, topped with mozzarella, sprouts and a chickpea and feta hummus on whole grain bread from a local bakery. What’s more comforting than that on a cool winter day?
Avocado Chickpea Sandwiches (makes 2)
Ingredients :
Whole grain bread
1 cup chickpeas
1/2 cup feta (low in salt)
1/2 tsp olive oil
2 avocados
Sprinkle of chilli flakes
Juice of 1/2 a lemon
Salt and pepperSprouts
Fresh mozzarella
Directions:
1. Smash avocados, lemon juice and chilli fakes with a fork in a medium-sized bowl. Season with salt and pepper and set aside.
2. With a hand blender (or regular blender), blend chickpeas, feta, olive oil. Leave it slightly chunky. Sprinkle with salt and pepper.
3. Take your bread and start layering avocado spread, chickpea spread, mozzarella and sprouts. You will have some extra avocado and chickpea mixture… I see no problem with that.
