Mango Pineapple Greek Yogurt Popsicles
Here is my attempt to tame those ice cream cravings and create a guilt free treat to enjoy all summer long. These mango, pineapple greek yogurt popsicles are ideal for those hot days, they have the perfect amount of sweetness and tartness with a little crunch from the almond crumb. Make them ahead of time and pop them in the freezer for easy access and unexpected guests!
Mango Pineapple Greek Yogurt PopsiclesÂ
Ingredients:
1 container of vanilla greek yogurt (0%) (16 oz)
3/4 whole pineapple, sliced and chopped
3 ripe mangos, diced
3 tbsp. coconut sugar
juice of 1/2 lemon
a pinch of salt
Crumb:
1/2 cup almond flour
1/4 cup coconut flour
1/4 cup walnuts
3 tbsp. coconut sugar
a pinch of salt
4 tbsp. coconut oil
Materials:
9 inch round pan
popsicle sticks
Directions:
Place the chopped pineapple, mango, coconut sugar, lemon and pinch of salt into medium sized pot over over medium-low heat, stirring constantly to prevent the bottom from burning. Cook for about 15 minutes until the fruit has softened. Continue stirring during this whole process while roughly mashing the fruit into a puree. Once softened, remove from heat and let cool slightly.
Pour the yogurt into the pot with the fruit and stir until evenly incorporated. Pour the mixture into a plastic-lined cake pan, smooth the top with a spatula and cover with plastic wrap. Place in freezer for at least an hour, until it’s frozen.
Meanwhile make your crumb:
Preheat your oven to 375 degrees F. In a food processor, combine almond flour, coconut flour, walnuts, coconut sugar, salt and coconut oil. Pulse about 8 times until the mixture comes together and resembles a crumbly texture. Pour the mixture onto a baking pan and spread out into a thin layer. Bake for about 12-15 minutes, until crumb is golden brown. Allow the crumb mixture to cool to room temperature as this will allow it to harden.
Remove your popsicles from the freezer and allow to sit out for about 5-10 minutes to soften a bit. Remove the plastic wrap and cut popsicles into pizza slices. At this point your popsicles should be at a good consistency for the crumb and popsicles steps. Dunk the bottom of each triangle into your crumb mixture, press down with your finger tips to make sure it sticks. Slide your popsicle sticks in the bottom of each triangle. Stick your popsicles back in the freezer if they have softened too much. Enjoy whenever!
