Mushroom Black Bean Burgers

I’m always looking for ways to replace meat in the kitchen, sometimes it’s a fail but most times I’m incredibly satisfied with the results. This is one of those times that was a complete success and even had my boyfriend stating “you don’t even miss the meat with these.” Ta-dah, I knew I nailed it with that statement. The portobello mushrooms create a nice meaty texture and spices add a smoky flavour that really takes on that burger essence. I served these up without a bun for myself, just some avocado and a side salad for a fresher version. For my guy, caramelized onions, chipotle yogurt sauce on a multi grain bun.

Mushroom Black Bean Burgers

2 cups portabella mushrooms, sliced and cubed (smaller pieces); gills remove
2 cups cooked black beans, rinsed and divided
1 cup minced broccoli, fresh only
1/2 cup red onion, minced
5-7 sundried tomatoes, minced
2 tbsp. fresh parsley, chopped
3 XL eggs, beaten
1/2 cup plus 2 tbsp.multi-grain breadcrumbs or panko bread crumbs
1 tbsp. bbq seasoning – use your favourite
1 tbsp. Worcestershire
2 tbsp. minced garlic
3/4 cup fresh grated Parmesan
Coconut oil or olive oil

Instructions:
In a large bowl add 1 cup of black beans and mash with a masher, leaving a few chunks here and there.

Add in the mushrooms, the rest of the beans, broccoli, garlic, onion, Worcestershire and bbq seasoning. Mix just until coated.

Add in the eggs, cheese and bread crumbs and mix gently with a large spoon until the mixture is combined. Cover with plastic wrap and leave to sit in the fridge for at least 30 minutes.

Heat a medium non-stick pan over medium heat and add in 2 tbsp. of oil. Once the oil starts to lightly bubble, dampen your hands and scoop 1/4 cup mixture in the palm of your hand and gently form a burger all the while pressing together. If your burger is having trouble staying together, add more breadcrumbs.

Place in the oil and cook for 3-5 minutes per side or until golden brown and a crust has formed on each side. Try not to touch them too much while they are frying. Serve hot with avocado, caramelized onions or hummus.
